A product derived from peasant tradition recognized as De. Co. “Malfatti” are one of the traditional rural dishes of the Municipality of Fortunago.
It is a dish which requires very few ingredients of "poor" origin: grated stale bread, beets and eggs. Its diffusion is connected to the fact that the products used are simple and within everyone's reach. In fact, they are easy to find, even today, while in the past most peasant families had a vegetable garden for their crops and a chicken coop.
This recipe for its link with the territory and its typicality has been recognized by the Municipality with the De. Co. mark, making it a great source of pride for Fortunago and for the whole Oltrepò Pavese.
Its preparation involves an initial cooking of the beets, which will then be chopped with the help of the mincing knife and, subsequently, the addition of breadcrumbs and eggs. To flavor everything, we recommend the preparation of a sautéed onion, which will be mixed with the dough together with grated Parmesan, a combo that will make the dish tastier and more palatable. Once the ingredients have been mixed, you proceed to form strips with your hands: the "Malfatti".

Each territory can boast numerous typical and traditional products that are unique in their kind, in fact, there are some of them which have been given the title of "Municipal Denomination".
The De.Co. mark was born from a law, more precisely the Law n. 142 and is also a source of pride for many Municipalities in the Oltrepò Pavese area. It certifies that a specific product, be it food or artisanal, but also a specific recipe, are considered original and typical of the place.
There are many delicacies that boast this recognition, helping to enhance the places they come from and to guarantee their historical and cultural link with the territory. The "Miccone" of Stradella, the "Malfatti" of Fortunago, the potato of Brallo and the "Mundiöla" of Montesegale are just some of the examples of De.Co. that belong to and characterize the Oltrepò.
