Article description

“La Torre” is a typical cake of Stradella with homemade origins, whose recipe, partially revisited, has been handed down over the years. Thanks to its characteristics and its ingredients it has been recognized as a De. Co. product from the Municipality, a mark that protects its identity and certifies its link with the territory.

Its birth is due to the need of families to collect what was good left over at home, therefore eggs, butter, flour type 00, potato starch, sugar, salt, vanilla flavor and dried fruit (specifically hazelnuts).
The process for making the "La Torre" cake initially involves the amalgam of butter, sugar and hazelnuts, which gives the mixture a crumbly consistency. Then, the remaining ingredients must be added, such as vanilla, an essential element of this recipe to enhance the flavor and aroma of the dried fruit. Once the processing is completed, the mixture obtained will have a consistency similar to a shortcrust pastry and will be ready to be baked.

The result of this recipe is a tasty, fragrant and excellent dessert, especially if accompanied with wines. In fact, tradition wants it to be consumed soaked in wine; nowadays this custom has undergone a slight modification, also providing for pairing with sweet wines (less common product in Oltrepò).
